Sambal Belacan tofu in Mapo style

If you follow me on instagram you will know that I cooked this today..haha
I bought a dozen of tofu from the Japanese groceries store since last month
The tofu taste like soy milk, and I am so not used to it...>.<
I know it is healthy and nice..some people will like it very much..like my bf..
But for me, I just feel like I am eating soy milk instead of tofu..=.=
Therefore, today,I decided to make it into Mapo Tofu..so that the spice of the chillies can cover some of the soy milk taste from the tofu..
The tofu that I am talking about. =) if you like it, you can get it from the Jap groceries store ^^

Note: I am not saying that the tofu is bad, it is extremely good instead! Isnt tofu should taste like soya since it was made by soya..so this is a good tofu! haha
Besides, I found out that spicy food do helps to keep warm in the cold day..=P
Ok, I guess I should stop my nonsense and get started with the cooking recipe..
Btw I am making it into a more malaysian style mapo tofu since I have some sambal belacan(Malaysian spicy sauce) in my fridge =)

^^

Ingredients:
1 box of soft/medium tofu
some scallion
1tbs of oil
1 tbs of sambal belacan
100g of minced pork
1/2 tbs of Soybean paste(豆瓣酱)
1/2 tsp of sugar (optional)
scallions (optional, chopped into 3 inches)
1 tsp of potato starch
1 cup + 2tbs of water

Steps:
1. Cut the tofu into cube(1/2 inch X 1/2 inch) and boil it into hot water.
2. While waiting for the tofu to be cooked, you can heat another pan and add the oil into it.
3. Add sambal belacan and soybean paste into the pan.
4. Add the mixed pork into the pan.
5. The tofu should be cooked after boiled it for 5 minutes, then replace it into the pan.
6. Stir-fried the tofu and let it mixed well with the sauce on the pan.
7. Add 1 cup of water into the pan.
8. Mixed 2 tbs of water with the potato starch, then add it into the pan. (This step is to thicken the sauce)
9. Stir the tofu and add the sugar and scallion.
10. Serve it and enjoy your meal!

Tips:
a) If you want to have a thicker sauce, add more potato starch.
b) Don't be lazy to mixed the potato starch with water. If you are, you might get a bad result in thickening the sauce.
c) Decorate your dishes with chopped scallions (0.5 mm each), for me, I am using black sesame here =)
d) If you want to make into a vegan dishes, skipped the minced pork and get some belacan for vegan. At here I am doing so =)

I hope you enjoy my recipe. =)
Feel free to post your dishes under the comment if you cook it with my recipe =D
Happy cooking!
